Acqua di Noto is an Italian niche perfume house based in Noto, a Baroque town in south-eastern Sicily. It was founded in December 2021 as a small artistic perfumery by Paoletta Ruffino and Ludovica Infantino, a mother and daughter who had already opened an art gallery in the same building five years earlier [2][4]. The story begins on Via Nicolaci, a street the company describes as "one of the most beautiful in the world," inside the Palazzo dei Principi di Villadorata. There the two founders opened an art gallery in 2016, and in December 2021 added a perfumery alongside it [2]. Paoletta Ruffino, an art historian, works as creative director; Ludovica Infantino serves as the company's administrator and handles commercial relations abroad [2].

The pairing of art history and scent runs through how the house presents itself. The founders describe themselves as "Heirs and Custodians of a history that drives us to love our land," and frame the perfumery as an extension of their work documenting and promoting Sicilian heritage.

Acqua di Noto launched with a set of unisex perfumes, each named for a place or figure connected to the area. The first releases in 2021 included Marzamemi, Vendicari, Don Giacomo and Stizzi d'Amuri [5]. Marzamemi opens on lemon blossom and bergamot over a heart of myrrh, tobacco leaf, lavender and jasmine, settling into benzoin, amber, tonka bean and vanilla; Vendicari is described as a fresher composition drawn from the scents of the Vendicari nature reserve. Later additions include Aqua Lustralis, launched in 2024, along with the Infiorata and Nicolaci 13 lines.

The fragrances are developed with Atelier Fragranze Milano, a perfumery house the company names as its creative partner, while the Sicilian artist Benedetto Poma designs the packaging [1]. The house emphasises culture, tradition and history as the defining qualities of its products, and describes its aim as turning the act of personal purification into a sensory ritual rather than a simple cosmetic purchase. Its logo carries the same theme: a tall tripod incense burner flanked by two heraldic griffins, drawn from carvings on the entrance of Palazzo Nicolaci, with the griffins standing for guardianship, vigilance and courage.

The brand is active. Its most recent fragrance, Aqua Lustralis, was released in 2024, and it runs its own e-commerce site, which marked the company's second anniversary with a promotion [5].
